Saint Patty’s Day, Saturday, March 17th

Yes, that is next week!  Please come and join us for cocktail specials, (please no Flaming Irish Car Bombs!), Irish beer, and Irish food specials. Starting after 10 p.m. we will be serving Fish and Chips, featuring our wonderful Pomme Frites.  We will also be serving Corned Beef and Cabbage sandwiches.


This months recipe

We thought that for this month, we would share one of our cocktail recipes. For those of you who may not have heard, Playboy.com named Ariana, our resident mixologist, one of “Americas Top Ten Bartenders”.

At the bar, she fresh squeezes organic fruit for all of her Cocktails daily.  Utilizing boutique spirits and unique ingredients, she creates original drinks, which are meant to be savored and sipped in the classic sense. 


Irish Mint Lemonade

1oz Bushmills Whiskey
mint
3 tbsp. lemon juice
3 tbsp. sugar
 
In a Collins glass, muddle the mint, sugar and a lemon wedge.  Add the ice and 1oz. Bushmills, or Irish whiskey of your choice, and lemon juice.  Then fill with filtered water.  Pour all contents into a martini shaker and shake until sugar is mostly dissolved.  Then pour back into the Collins glass and garnish with a mint sprig.


Wine Maker Dinners

We will be introducing winemaker dinners.  The First dinner will be on Sunday, May 6th.

We will be hosting McCrea Cellars from Washington.  This winery is dedicated to the production of Rhone varietals.  Washington AVAs may be some of the world’s premier Syrah Designations.  Come join us for an intriguing dinner. Happy Hour, Tuesday thru Friday

From 5 p.m. to 7 p.m. we have put together a great happy hour menu featuring small plates, wonderful Paninis, and drink specials. All of these items are offered at Happy hour prices. This is a very satisfying way to end a hard day at work.

Scotty’s Wine Notes and Bottle Rocket

It is my goal to source obscure cool wines produced by small boutique wineries run by individuals who live by the same code that we do at Modus: “Quality First”.  I personally feel that the pricing of wine has gotten out of control, and that there are many values in obscure regions around the world.  These wines are expressive of their terrior and varietal.  I do not bring you big alcoholic CA wines.  You can find that anywhere. Instead I offer you gems…55 of them.  My wine list changes constantly, because I may only get 1 case of any given choice.  So, if you are in Modus ask for me.  It will be my pleasure to talk with you and guide you to a discovery of something cool.  

By working with the wineries, each month, I will get a few cases of wine that I will offer to you at value.  This allows me to share something special at an affordable price, while giving a new and upcoming producer some limelight.

This Month:

2005 Owen Roe, “Ex Umbris”, Syrah, Washington........................45

Latin for “out of the shadows”, this wine was originally crafted to express the smoky notes imparted to the Syrah grapes by a raging wildfire. One of the characteristics of this noble grape is its inherent smokiness, a flavor
that comes through even without Mother Nature’s assistance.

This vintage is pure, unadulterated Syrah… Smokey and meaty with a beautiful weight and balance…Coco powdered tannins hang in for a long vanilla ride. 

2003 Movia, Sauvignon Blanc, Slovenia.........................................49

I believe that this winery will be considered one of the worlds greatest in the next ten years.  The Wine Maker, Ales, farms and produces wine under a strict adherence to the Biodynamic Philosophy.
If you haven’t heard of this technique before, Biodynamic Farming is fundamentally a belief that the entire vineyard is a life force.  As such, you must observe the entire vineyard and treat the system, not specific vines.  The techniques are varied and too complex to provide an in depth detail in a synopsis, but as proof of the technique, many of the greatest wineries in the world have switched to the practice.  (I have many Biodynamic wines, talk to me for info)

This Sauvignon Blanc is amazing.  It is heady with aromas of grapefruit Croissants…the palate is rich and opulent with traces of vanilla intermingled with citrus, kefir lime and interestingly enough, apple.  The beautiful thing about this wine is that it evolves in the glass and tastes better at a warmer temperature. 

NOTE:  I also have a very rare sparkling wine, PURO, made by this Producer.  I was only allocated a small amount; so, it is not on the regular menu.  Ales uses a very old technique, and buries the wine in the vineyard after bottling in order to utilize the tidal influences of the soil to “turn” the wine on its lees.  Sounds crazy…but it is a fantastic wine. Ask me about it, if you are interested…I have to open it with a different technique than normal bubbles.
